Chickpea, Lemon, and Herb Salad
2 15oz cans chickpeas-drained and rinsed
1 large carrot-shredded
1 pint cherry tomatoes
1 bunch basil-sliced
1 bunch parsley-chopped
1 cup shredded parmesan
Zest from 1-2 lemons
Toss all ingredients in a large bowl and combine with dressing (may not need all of the dressing). Serve over salad greens.
1/3 cup fresh lemon juice
2/3 cup olive oil
2 cloves fresh garlic
1 tablespoon honey (or to taste)
2 teaspoons kosher salt
1 teaspoons pepper
In a blender, combine all dressing ingredients until emulsified.
